Festive & Fit| Protein Buckeyes Recipe.

As winter rolled in I fell off the wagon an bit when it came to being consistent in my workouts. Whitney Simmons and her bubbly, fun, inspiring youtube channel has been instrumental in getting me back on track. Recently she featured a no bake holiday treats video on her channel, and I decided to make some buckeyes. Here are my results with a few substitutions.



Ingredients:


  • 1 cup peanut butter
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon ground cinnamon 
  • 1/3 cup shredded coconut (pulsed in a food processor)
  • 1/2 cup of Vanilla Protein Powder ( I used Just Pea
  • 2 tablespoons of maple syrup (I used agave instead) 
  • Chocolate Coating: 
    • 1/2 cup of dark chocolate chips
    • 1 teaspoon coconut oil
  • Sprinkles 
These buckeyes were super easy to make. Simply melt the peanut butter a bit, combine the first 6 ingredients in the list above, and then roll tablespoons of batter into balls. Once you have a tray of peanut butter spheres, pop the tray in the freezer for 20 minutes. Next, melt the coconut oil and chocolate chips in a heat safe bowl. Dip the buckeyes in the chocolate mixture, then dip into sprinkles. Lastly, I laid the buckeyes on a tray and let them sit in the freezer for another 10 minutes to firm up the chocolate. 

Enjoy immediately, or keep in the fridge!
